Meatless Monday with MorningStar Farms

Food,  one of my favorite subjects.  I grew up eating all that good southern cooking.  Mashed potatoes and cornbread at every meal.  Lots of grease and always enough left over for 2nds and sometimes 3rds.  I will save what all this wonderful cooking did to my health for another post.

I would like to fast forward until today.

41 years old and working hard to live a healthier lifestyle.  I guess it helps some that I married a European that doesn’t care for the southern approach on cooking.  It keeps me in check!

Today I would like to share a recipe that is very very simple.  Delicious & Healthy.

For lack of a better name John & I call it “Pepper Stew”.

you will need:

  • a red pepper
  • green pepper
  • onion
  • morningstar farm crumbles
  • olive oil

  1. Cut up the peppers & onion
  2. on medium heat put some olive oil in skillet and it get it warm
  3. add peppers and onion
  4. saute them until they are your desired tenderness,  we like them mushy some ppl likes the crunchiness

5.  In another skillet add your Morningstar farm crumbles

6.  Your basically warming up the already cooked frozen meat

7.  Add meat to veggies

8. stir

9.  serve it up!

That’s it!  This is good over rice, you can put it over potatoes or noodles.  I have been watching carbs so we just ate it without any other sides.

The important part,  the taste.

This was great,  John and I both loved it and decided we would buy it in the future.  It didn’t have the ground beef taste either.  The texture to me was more like steak.

I was surprised at the choice there was with morning star products.  I love the  chicken nuggets,  I eat them for lunch a lot and will be getting those again as well.

We also got the veggie burgers and sausage links.

While John really loved the sausage links, they were my least favorite.  I thought they were dry for my taste.  The veggie burgers are just as good.  With this many choices it makes it easy to have meatless Mondays!

    Hi Tabby,
    My daughter, Nicole, granddaughter and son-in-law live with us. My son-in-law is vegan so of course he does not eat meat, milk, eggs, cheese etc. I do not know how he does it. Life would not be the same without those items – especially ice cream.

    Although I am not a super meat eater, I do occasionally enjoy very lean Eye of Round Roast Beef, Loin Chops, Chicken Breast, thin hamburgers and hot dogs.

    Anyway, yes I have had meatless meals. A couple of days ago, my daughter made Sloppy Joes. Sorry I did not pay attention to the hamburger replacement Name Brand. I will next time. I will also check our grocery stores for Morning Star products because some are definitely better than others. It is such a waste of money when you come across one that your taste buds revolt against.

    I wonder what my daughter is cooking tonight.

    I am not vegan or vegetarian but am eating healthier at least 75% of the time.

    I don’t want to sacrifice taste when I am trying something new. So far Morning Star Farms is my favorite when it comes to eating “meatless”.

    These crumbles I used in this recipe would be perfect for sloppy Joes, chilli etc. The possibilities is endless.
