Just Almonds, Portuguese Almond Cookies

Do you like Almonds?  I love them myself.  Especially in an almond joy!  Seriously though almonds are a really healthy food.  They are really great to eat by themselves or in a recipe.  While I have had almonds several times I had never tried the Almond Flour. 

I was talking to a lady from a company called Just Almonds and she offered to send me a bag of their almonds as well as a bag of almond flour.  My intention was to make something with this almond flour and share the recipe here.  Things turned out different. 

Last Wednesday I went out with my mom for a belated mothers day, girls day out. 

When I came home my husband was all excited and said he had a surprise for me.  John loves to cook. He loves to bake.  And he loves to experiment.  He had decided to make cookies with my almond flour!   At first I thought OH NO.  He has ruined this bag of flour and I won’t be able to share with you all. 

I was wrong.  Yes I don’t admit that often.  When I first bit into the cookie I found it kind of hard.  Once it sat out for a bit they did soften up.  The taste was excellent!  I had to ask him to type out the recipe so I could share it with you all.  He told me that without the almond flour the taste would not have been near the same.  Here is the recipe for John’s

Portuguese Almond Cookies

10.5 oz of Almond flour
2 egg whites
2.5 oz flour
5.2 oz sugar
butter to grease the plate.

Beat the egg whites to get solid.

Add: blanched Almond flour, flour and sugar.

Stir to mix as much as possible before putting it on the counter.

Knead and form into a roll some 2 to 3 inches in diameter. 

Add some flower when it’s still too sticky.

Cut 1/2 inch slices and put on the buttered plate.

Pre-heat the oven at 350 F.

Bake 15 minutes until light brown.

Remove from the plate immediately.

The almonds were really good as well.  They are hard to chew at first but the taste is amazing.  I just ate a few plain as a afternoon snack.  DO you know the benefits of almonds?  Here are a few!
