Crock Pot Chicken tortilla soup

One of my most favorite things to use in the kitchen is my crock pot.  It is right up there next to my coffee pot, and that is saying a lot! 

I love being able to throw something in there at night, going to bed and waking up to a wonderful pot of chilli or soup beans for lunch. 

I thought I would share one of my favorite crock pot recipes with you.

Chicken Tortilla Soup. 

what you will need:

Ingredients
4 boneless, skinless chicken thighs
1 4-ounce can chopped green chilies, drained 2 cloves of garlic, minced
1  chopped onion
2 15-ounce cans of diced tomatoes, including juice
1/2 – 1 cup chicken broth
salt and pepper
4 corn tortillas, sliced into 1/4 inch strips
1/2 cup shredded Monterey jack cheese

Directions

  1. Place chicken in Crock Pot. 
  2. In a separate bowl, combine chilies, garlic, onion, tomatoes, 1/2 c chicken broth . Blend and pour over chicken.
  3. Cook on high for 3 hours. When chicken is tender, shred it with a fork knife etc.. season to your taste
  4. Just before serving, add tortillas to crock pot. Stir.
  5. cook on low another 2 to 3 hrs.
  6. Serve in soup bowls, topping each with shredded cheese and I love adding sour cream to mine.
